Description Red Star® Pasteur RedTM (Davis 904), a strain of Saccharomyces Cerevisiae, has been derived from the collection of the Institute Pasteur in Paris. It is a strong, even fermenter that produces full bodied reds.
This yeast encourages the development of varietal fruit flavors, balanced by complex aromas, especially when using grapes of the Cabernet family. It may be necessary to cool the fermenting must to prevent unwanted temperature increase.
This yeast is reported to give character to less robust red grapes, or those picked before optimum development. Properties – Saccharomyces Cerevisiae Directions for use Rehydrate in ten times its weight in 86F – 95F water, rehydration time should be 20-25 minutes. It is a strong fermenter with good ethanol tolerance, and will readily ferment grape musts and fruit juices to dryness.
This strain also has good tolerance to free sulfur dioxide.
This strain is recommended for full bodied reds and whites. It is not recommended for grapes that have recently been dusted with sulfur, because of a tendency to produce hydrogen sulfide in the presence of higher concentrations of sulfur compounds.

When a wine is sweetened before bottling, potassium sorbate is used to prevent refermentation when used in conjunction with potassium metabisulphite.
Please note: this product will not stop an active fermentation.
Potassium sorbate should always be used at the same time with potassium metabisulphite. Together they make for a rather inhospitable place for micro organisms.
The sulphites from potassium metabisulphite removes the oxygen from your wine to prevent micro-organisms from getting established while sorbic acid from potassium sorbate renders yeasts and molds unable to reproduce.
Potassium sorbate is used as a preservative in a number of foods, since its anti-microbial properties stop the growth and spread of harmful bacteria and molds. It is commonly used in wine production because it stops the yeast from continuing to ferment in the bottles. Note: Potassium Sorbate is only effective when Sulphite is present.

30L/7.9 gallon plastic fermenter pail complete with lid, airlock, thermometer strip, and spigot. It is made from polypropylene as it is less porous and significantly smoother than HDPE fermenters. HDPE is porous and can harbor microbial activity making it more difficult to clean and sanitize. Being less porous, polypropylene also does not absorb aroma like HDPE so there is less flavor carry over from batch to batch.

The Fuggle hop originates in England and was first discovered in 1861 in a hop yard owned by George Stace in Kent.
